The most compact full size gas convection oven available, able to handle 4-6 full size sheet pans. Water injection, Cook N Hold. 3 hour roast timer and 60 minute bake timer, field reversible door, stainless steel and porcelain, interior lights - all standard. Steel infra red burner - 50% more efficent than normal ovens and saves 1 linear foot of hood. Can be used with A25 stand or E89 Holding/Proofer. Specify Nat or propane (110V required)

Moffat's compact oven proofer/holding cabinet system includes the E89 proofer/holder, with 8 pans of proofing/holding capacity, in a controlled heat and humidity environment. Specify Nat or Propane. 110V 15 amp breaker required for proofer/holder.
